Peach and cherry ice-lollies Ice cream, Kids friendly, No Baking, Snack April 21, 2015 0.0 0 Prep: 20 mins Cook: 3 hrs 20 mins 3 hrs 3 hrs 20 mins Serves: 10 lollies Share 1 Full-screen Ingredients20 French Glacé Cherries, roughly chopped250 g caster sugar 400 ml water200 g ripe peeled peach slices (tinned are very good)150 ml cherry juice Method In a small saucepan, bring the water and sugar to a boil. Boil for 2-3 minutes and then remove from heat. Pour into a bowl and leave to chill completely. In a food processor or blender, add half the sugar syrup with the peaches. Blend until very fine. Pour into 8 ice-lollie molds, add wooden sticks and place in the freezer for approximately 1 hour. Take the remaining syrup and combine with the cherry juice and chopped cherries. When the peaches fairly set (after 1 hour), pour into the molds the French Glacé Cherry mixture and let freeze solid, for about 2-3 hours.
